I know that eating a plant-based diet will boost my immunity but I had not really thought about it helping with the coronavirus or COVID-19. I watched the “Forks Over Knives” documentary a long time ago and then re-watched it while doing my 5-day fast and 21-day elimination diet. It is compelling and convicting. But it is a huge shift to consider cooking without oil. It is also a big shift to start eating more beans and legumes.
Since the Paleo and “Whole 30” movements, my diet focused on animal protein, vegetables, fruits, and fats, without concern about where those fats came from. Even during my 5-day fast and 21-day elimination diet I was still focusing on protein and vegetables. But the one week of that diet that eliminated animal protein was enlightening. I felt better immediately and my resting heart rate dropped. I’m convicted, but not yet implementing the behavior fully in my own life.
I am on the Forks Over Knives email list now and have watched a few of their webinars. I just signed up for this summit at the end of April. The registration email included a link to a pdf about food and immunity. Even if you can’t participate in the summit, it is worth reading through their pdf and reminding yourself of all the amazing things foods do for our bodies. I’m inspired to work harder to focus my diet on vegetables and fruits. I especially need to avoid the sugars I crave!
A plant-based diet is also a sustainable diet that could support the whole planet without destroying our planet. It would be a huge shift for my family, but it is something that I am beginning to ponder and explore in small doses. Good luck!
